Words just happen when I get this excited. Because today marks the day when I discovered how to make 4-ingredient, homemade tots FROM ZUCCHINI. And these golden little wonders are basically the greatest thing since grated potatoes. Want to make some? Grab a skillet. We’re about to blow your gourd. Actually, if we’re being technical, we’re about to fry your squash. But this is not a time to mince words. It is only a time to grate zucchini. Here’s your lineup. Zucchini, zucchini, salt, egg, Bisquick™. If you’re eating paleo or gluten free, you can swap in mashed or instant potatoes for the Bisquick™. The baking mix gives these little tots a light, fritter-like bite. So, if you’re feeling like a purist, mix in mashed potatoes instead (same amount as the Bisquick™). Totally works. I decided to cookie scoop my tots. A quick scoop of the batter popped into frying oil makes for one-bite wonders. No messy hands, and no time-consuming tot shaping. If you’re a tot-shape purist you’ll definitely want to go with the mashed potato version, taking the time to ever-so-gently shape your tots into perfect little cylinders. These yummy little puppies are amazing when served with ranch dressing. Or try dipping them in hummus, sour cream or sriracha. All’s fair in love and tots.

Ingredients

  • 3 cups grated zucchini (tightly packed)
  • 1 egg
  • 1 1/2 cups Original Bisquick™ mix
  • 1 teaspoon salt and pepper
  • 1 cup coconut oil
  • 1 cup olive oil

Dipping:

  • 1/2 cup ranch dressing

Instructions

    In a large bowl, stir together grated zucchini, egg, Bisquick™, salt and pepper. Mix until a soft dough forms.

    Heat coconut oil and olive oil over medium heat in a small pot or deep-sided skillet. Using a mini cookie scoop, drop zucchini mixture into the hot oil, frying until golden brown, about 2-3 minutes. Flip with metal tongs, if needed, to ensure even cooking.

    Transfer to a paper-towel lined plate. Serve warm with ranch dressing for dipping.
