Beefy, Cheesy Taco Calzones

We’ll take any excuse to eat tacos for dinner. This time, we’ve wrapped all that good taco flavor in crescent dough for an adorable beefy, cheesy bundle you won’t be able to resist. These calzones are a no-brainer solution to weeknight dinner.

Beefy, Cheesy Taco Calzones

Ingredients

Calzones

  • 1/2 lb ground beef (at least 80% lean)
  • 1/2 cup finely chopped red bell pepper
  • 1/3 cup water
  • 1/4 cup fresh or frozen whole kernel corn
  • 1 tablespoon from 1 container (6.25 oz) Old El Paso™ Original Taco Seasoning Mix
  • 1/8 teaspoon ground red pepper (cayenne)
  • 1/2 cup from 1 can (16 oz) Old El Paso™ Traditional Refried Beans
  • 1/2 cup shredded Cheddar cheese (2 oz)
  • 2 cans (8 oz) refrigerated Pillsbury™ Original Crescent Rolls (8 Count) or 2 cans (8 oz) refrigerated Pillsbury™ Original Crescent Dough Sheet

Dipping Sauce

  • 3/4 cup sour cream
  • 1/3 cup thick & chunky medium salsa
  • 2 tablespoons finely chopped fresh cilantro leaves

Instructions

    Heat oven to 375°F.
  • Step

    In 10-inch nonstick skillet, cook beef and bell pepper over medium-high heat 5 to 7 minutes, stirring frequently, until thoroughly cooked; drain. Reduce heat to medium. Add water, corn, taco seasoning mix and ground red pepper. Cook 2 to 3 minutes, stirring occasionally, until mixture is thickened. Remove from heat.

    If using crescent rolls: Unroll dough; separate into 4 rectangles. Firmly press perforations to seal. Press each to form 6x5-inch rectangle. If using dough sheet: Unroll dough; cut into 4 rectangles. Press each to form a 6x5-inch rectangle.

    Spread 1 tablespoon refried beans on half of each rectangle to within 1 inch of edge. Top with 2 tablespoons beef mixture and 1 tablespoon cheese. Fold dough from the top over filling; crimp edges, or press with fork firmly to seal. With fork, prick top of each to allow steam to escape. Transfer to ungreased large cookie sheet.

    Bake 13 to 15 minutes or until deep golden brown.

    Meanwhile, in small bowl, mix all Sauce ingredients.

    Serve calzones warm with dipping sauce on the side.
