  • If there’s one thing I love about summer, it’s caprese. I make SO many variations on caprese all summer long. It really is one of my favorites, especially when using homegrown tomatoes and basil! Caprese is traditionally three main ingredients: tomatoes, mozzarella and basil, garnished with olive oil, salt and pepper on top. Effortless, healthy and delicious, it really doesn’t get any better (or easier). It’s always a hit when served at summer parties! Today I made simple caprese pizza bites—melted mozzarella over perfectly baked pizza dough and topped with fresh tomatoes and basil. YUM!! Melted cheese and pizza dough is always a hit, and when paired with fresh basil and tomatoes—definite crowd pleaser!

Ingredients

  • 1 can (13.8 oz) refrigerated Pillsbury™ Classic Crust Pizza Crust
  • 8 oz. fresh mozzarella cheese
  • 1 cup cherry tomatoes or 4 tomatoes, sliced
  • 1 cup fresh basil leaves
  • Olive oil, for drizzling
  • Salt and pepper, to taste

Instructions

    Heat oven to 375°F. Line a baking sheet with parchment paper.Unroll the pizza dough and cut into 14-16 triangles. Place the triangles on the prepared baking sheet. Place a slice of mozzarella cheese on each triangle.

    Bake for 10-15 minutes or until the dough is puffed and the cheese has melted.

    Remove from the oven and top with fresh tomatoes. If using large tomatoes, slice into slices, if using cherry tomatoes, slice in half. Drizzle the tomatoes with olive oil and then sprinkle with salt and pepper. Top each pizza with a basil leaf and serve.
