Or cook on the backyard grill. Serve with corn on the cob, a crisp green salad or crusty French bread for a perfect menu pair. Whether making this as a quick weeknight meal, or prepping it for a neighborhood BBQ, Pork Chop Caprese is a craveable classic.

Ingredients

  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon fresh-ground pepper
  • 4 center cup pork chops
  • 8 oz fresh mozzarella, sliced
  • 1 pint cherry tomatoes, halved
  • 1 oz fresh basil leaves

    Preheat oven to 375°F.

    Heat a cast iron grill pan over high heat. Drizzle with olive oil.

    Season pork chops with salt and pepper and place in hot grill pan. Cook 4 to 5 minutes. Flip pork chops and cook on second side for 3 to 4 minutes more.

    Top each pork chop with slices of mozzarella. Transfer to oven. Bake for 12 to 15 minutes, or until cheese melts and pork chops are cooked through (internal temperature of 145°F).

    Top with tomatoes and fresh basil before serving.
