Chicken Breasts with Pesto and Parmesan

Ingredients

  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground pepper
  • 4 boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 1/3 cup finely chopped green onions
  • 1 cup halved grape tomatoes
  • 1/4 cup basil pesto (from 7-oz container)
  • 1/4 cup shredded Parmesan cheese

Instructions

    Sprinkle salt and pepper on chicken breasts. In 12-inch nonstick skillet, heat oil over medium-high heat. Cook chicken breasts in oil 2 minutes. Reduce heat to medium. Cook 15 to 20 minutes longer, turning once, until juice of chicken is clear when center of thickest part is cut (at least 165°F) and chicken is light brown.

    Stir in green onions and tomatoes. Cook 1 to 2 minutes. Add pesto. Cook about 1 minute or just until heated through. Serve chicken with Parmesan cheese on top.
