  • A frittata is a kind of traditional Italian omelet that's very similar to the Spanish omelet that's made with potatoes. Both are made in a frying pan or in the oven. The difference is that with the frittata the ingredients are added over the omelet once it’s almost finished so it looks like a pizza. On the other hand, in a typical Spanish potato omelet, all the ingredients are combined. This recipe is perfect for a brunch and pairs great with avocado, tomato, wheat tortillas or toast.

Ingredients

  • 1/4 cup ground chorizo
  • 4 large eggs
  • 1/4 cup black beans
  • 1/4 cup tender corn
  • 4-5 cherry tomatoes, halved
  • 2 tablespoons red bell pepper, finely chopped
  • 1 tablespoons jalapeño, finely chopped
  • 1 medium avocado

Instructions

    In a small frying pan, cook the chorizo for 2 minutes; stir as it cooks so it doesn’t burn. Remove and combine with the rest of the ingredients, except the eggs.

    Add the whisked eggs to the same frying pan, let cook for 2 minutes or until they start to thicken. Add the rest of the ingredients. Cook for 1 minute on low heat, with a lid on and without stirring.

    Serve immediately with wheat tortillas or bread.
