  • There’s nothing like homemade fried chicken. This recipe is super easy, so it’s great for first-time chicken fryers! Oh, homemade fried chicken. It's wonderful comfort food. Served hot from the pan, it's juicy, bone-warming goodness. Or you can eat it chilled -- preferably while seated on a picnic blanket in a picturesque location. This homemade chicken is first marinated in seasoned buttermilk and then breaded and fried. I love the flavor that the buttermilk imparts on the chicken -- it's almost tangy, but in this amazing way.

Ingredients

  • 1 cup buttermilk
  • 1 clove garlic, minced
  • Salt and pepper
  • 4 boneless, skinless chicken breasts
  • 1/2 cup Progresso™ Bread Crumbs, Italian Style
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon sweet paprika
  • Canola oil

Instructions

    Whisk together the buttermilk, garlic, salt and pepper. Transfer mixture to a resealable plastic bag. Add the chicken, seal the bag and let marinate for 2 hours.

    Whisk together the breadcrumbs, Parmesan cheese and paprika in a medium bowl.

    In a deep skillet (or pot) heat 1-inch of canola oil over medium heat. You want it HOT before you add the chicken.

    Once the oil is hot, take the chicken out of the buttermilk mixture one piece at a time. Roll it in the breadcrumb mixture, pressing the mixture into the chicken to fully coat.

    Add the chicken to the hot oil carefully (you may want to use tongs). Cook for two minutes, then carefully flip. Cook for another two minutes, and then flip again. Continue this process until cooked through -- use a meat thermometer to determine doneness or simple cut into the thickest part of the breast.

    Remove the chicken breasts to a paper towel-lined plate. Let cool slightly before serving.
