Greek Tzatziki Pasta Salad

Grape tomatoes, chopped cucumber, kalamata olives, red onion and feta cheese — the gang’s all here! Combine this classic lineup with all the makings of a pasta salad, and you’re looking at the most requested side of summer.

Greek Tzatziki Pasta Salad

Ingredients

  • 1 box Betty Crocker™ Suddenly Pasta Salad™ classic pasta salad mix
  • 3 tablespoons cold water
  • 2 tablespoons olive oil
  • 1/2 cup plain Greek yogurt
  • 1 teaspoon fresh lemon juice
  • 1 tablespoon chopped fresh dill weed
  • 1/2 cup chopped cucumber
  • 1/2 cup quartered grape tomatoes
  • 1/3 cup pitted whole kalamata olives
  • 1/4 cup chopped red onion
  • 1/4 cup crumbled feta cheese
  • 1/4 cup Progresso™ marinated artichoke hearts, chopped (from 6-oz jar)

Instructions

    Fill 3-quart saucepan 2/3 full of water; heat to boiling. Add pasta (from salad mix box). Gently boil uncovered 12 minutes, stirring occasionally; drain. Rinse with cold water; drain well.

    Meanwhile, in large bowl, stir together seasoning mix (from salad mix box), 3 tablespoons cold water and the olive oil. Stir in Greek yogurt, lemon juice and fresh dill weed.

    Stir cooked pasta, cucumber, tomatoes, olives, onion, feta cheese and artichoke hearts into dressing mixture. Serve immediately, or cover and refrigerate.
