If you love bruschetta and caprese, meet your new favorite appetizer! Mozzarella, fresh basil and tomato top freshly made French bread slices that are grilled to smoky perfection.

  • Bruschetta is an appetizer home run. Upscale and a total yum blend of Italian palate pleasers, it's a perfect opening act. When my gal pals and I get together for appetizers-for-dinner happy hour and it's my turn to choose, I always go for bruschetta. My other restaurant fave is caprese anything. Caprese salad, caprese pasta, caprese whatever. So I got to thinking ... caprese is basically an un-chopped-up version of bruschetta topping -- tomato, basil and cheese. So ... why not caprese bruschetta? And since it's still grill weather, why not Grilled Caprese Bruschetta? Turns out, the amazing taste really masks how easy these are to prep and pop on the grill. Minutes, tops. Sooo easy. Start by baking a loaf of Pillsbury Simply®...Rustic French Bread, then layer on the toppings. And the result is an indescribable crunch and "Mmmmm" moment all at once. These don't last but a few minutes. Nobody can eat just one. So have your serving platter and a cattle call ready when you take them off the grill. If you're dining alfresco, these bambinos are the perf warm-up act to any dinner. Fact is, it won't matter what you feed folks after this. They'll still be in heaven and won't even notice.

Grilled Caprese Bruschetta

Ingredients

  • 1 can (11 oz) refrigerated Pillsbury™ Original French Bread
  • 16 slices fresh mozzarella cheese
  • 16 thinly sliced tomato slices
  • Fresh basil leaves
  • Salt and pepper or garlic pepper
  • Olive oil
  • Balsamic vinegar

Instructions

    Preheat oven to 350°F. Bake bread according to package directions and allow to cool before slicing. (This step can be done ahead of time.)

    Cut bread, cheese, and tomatoes into 16 slices each. Select 16 basil leaves; remove stems. Set all ingredients aside.

    Brush olive oil lightly over both sides of each bread slice. Preheat grill to medium-high heat and place bread slices on grill, baking each side until light grill marks appear (about 2 minutes per side).

    Reduce grill heat to low (or turn grill off). On each bread slice, place a slice of cheese, basil leaf and tomato slice. When all are assembled, sprinkle with seasoning (salt and pepper or garlic pepper), then drizzle with balsamic vinegar. Close grill lid and heat appetizers until cheese begins to melt. Remove from grill and serve immediately.
