Mexican-Style Brown Rice with Avocado

  • Brown rice is one of our favorite foods but it can get boring eating it the same way. Good news is that rice is very versatile, making it the perfect ingredient for all of my kitchen creations. This time, I decided to make it Mexican style: with corn, beans, peppers and onion. Plus, I added one of my favorite ingredients: avocado! Colorful and tasty!

Mexican-Style Brown Rice with Avocado

Ingredients

  • 1 tablespoon vegetable oil
  • 1/2 cup onion, diced
  • 1/2 cup red bell pepper, diced
  • 2 garlic cloves, finely chopped
  • 1 cup brown rice
  • 2 cups Progresso™ chicken broth
  • 1 cup frozen corn kernels
  • 1 cup black beans, washed and drained
  • 2 tablespoons tomato sauce
  • 1 tablespoon cilantro, finely chopped
  • 1 cup avocado, diced

Instructions

    Heat oil in frying pan on medium heat. Add onion and bell pepper, sauté for 3-4 minutes or until soft. Add garlic and sauté for 1 minute. Add rice and combine with other ingredients.

    Add broth, corn, beans and tomato sauce; mix well. As soon as most liquid has been absorbed, reduce heat and cover with lid. Cook until rice is al dente, about 15-20 minutes.

    Sprinkle with cilantro and serve with avocado.
