  • Mini guava and cream cheese empanadas are the best example of sweet meeting savory in perfect harmony. These delicious treats are very popular in Puerto Rico and are always found at family reunions and parties. These pastries are typically prepared in "mini" sizes so that they can be served between the sweet and savory snacks on the table of appetizers. Whenever I prepare Argentinian empanadas for my husband and have leftover dough, I like to surprise him with sweet empanadas. Whether they're guava and cheese or dulce de leche, the result is always delicious. Learning to make empanadas at home is a great way to save on catering during special occasions, as it can be very expensive. Nothing beats homemade, especially when you can recruit the little ones to help. I used to make them fried, but now I prefer to make them in the oven because they're not as greasy. However, you can prepare them how you prefer.

Ingredients

  • 1 box (14.1 oz) refrigerated Pillsbury™ Pie Crusts (2 Count)
  • 1 (8 oz) package cream cheese
  • 6 oz guava paste
  • 2 tablespoons powdered sugar

Instructions

    Heat the oven to 350°F.

    Pull out the dough from the package and unroll it on a large, clean surface. Use a cookie cutter, or a cup, to cut out 16 dough rounds.

    Cut the guava and cream cheese into cubes approximately 1/4 inch. Fill each disk with one piece of each; seal the empanadas by folding one side over and using a fork to pinch the sides together. You can also seal them by making small folds in the dough with your index finger, but it takes a bit of practice.

    Place the empanadas on a baking sheet lined with parchment paper and bake for 20-25 minutes, or until have browned.

    Remove from the oven and let cool on a rack.

    Sprinkle with powdered sugar.
