  • Have you ever wondered why we call “peach cobbler,” peach cobbler? As it turns out, the fluffy-tender biscuit topping on this classic Southern dessert just so happens to resemble cobblestones which is where the name “cobbler” came from. You may also be wondering how we managed to take this already-irresistible dessert up another notch. The answer? We made it adorably mini, of course! Our mini peach cobblers are as sweet, buttery and mouthwatering as any full-size peach cobbler, not to mention just as good served alongside a scoop of vanilla ice cream, just sayin’.

Ingredients

  • 1 cup sugar
  • 1 cup flour
  • 2 teaspoons baking powder
  • 1 dash salt
  • 3/4 cup milk
  • 4 tablespoons (1/2 stick) melted butter
  • 2 cans (8 oz each) diced peaches
  • Cinnamon, to taste
  • Brown sugar, to taste

Instructions

    Preheat oven to 375°F. Line cups of a regular-sized muffin tin with cupcake liners. Add 1 teaspoon melted butter to the bottom of each liner.

    Combine sugar, flour, baking powder, salt and milk by hand. Put 2 tablespoons of batter inside each cupcake liner, on top of the melted butter.

    Add 1 tablespoon diced peaches on top of the batter in each tin. Sprinkle with brown sugar and cinnamon.

    Bake for 20 minutes. Allow mini peach cobblers to cool almost completely before removing from the pan.
