  • Now that Spring freshness is in the air, you need a crisp drink to match! This Spring Beer Cocktail recipe is a grown-up take on the infamous college punch (a handle of cheap vodka + 30-pack of light beer + tub of lemonade powder). I’ve seen it called many names before, from Skippy, to Jungle Juice, to Summer Beer. Some girls I was friends with in college used pink lemonade and called it by…another name. ;-) This adult version uses real lemons, a hint of ginger, and a classy pilsner, and is sweetened with agave nectar. Make sure to use a microplane on the ginger so you don’t end up with chunks in your drink. Mint on top makes it look so tasty! It also adds a nice herbal freshness to the drink as you mix it in. Fresh and crisp on a cool sunny spring afternoon.

Ingredients

  • 4 bottles pilsner beer
  • 4 lemons
  • 1 teaspoon grated ginger
  • 1 handful mint leaves
  • 1/4 cup agave nectar
  • 6 oz vodka

Instructions

    Gather your ingredients. Juice 3 of the lemons.

    Add the beer, lemon juice, ginger, vodka, and agave to the pitcher and mix well.

    Garnish with slices from the 4th lemon and the mint. Serve.
