    Sweet & sour pulled pork is a tangy crockpot version of the classic barbecue pulled pork. Rather than a rich, sweet barbecue sauce, this tender pork is cooked in a traditional sweet and sour sauce – with the addition of green peppers and pineapple for flavor and a kick of color. Served on sweet Hawaiian rolls, this is one recipe you're gonna want to eat every day of the summer!

    Pop everything into a crockpot. Seriously. Just stick it all in. You can whisk all the wet ingredients together first, or just stir them with a fork around the sides of the pork. Either way, this recipe is sooo easy to prep and put together. Let it slow cook during the day….

Ingredients

  • 1 pound pork roast
  • 2/3 cup ketchup
  • 1/3 cup sugar
  • 1/4 cup apple cider vinegar
  • 3 tablespoons cornstarch
  • 1 green pepper, diced
  • 1/2 sweet onions, diced
  • 1 lime, freshly squeezed
  • 8 Hawaiian rolls
  • 8 half-slices pineapple
  • Fresh cilantro

Instructions

    Place pork roast, ketchup, sugar, vinegar, cornstarch, green pepper, sweet onions, and lime juice in a crockpot. Whisk the mixture together slightly (it doesn't have to be perfect), then cover and cook on high for 4-6 hours.

    Use two forks to pull the pork until it's well shredded.

    Serve shredded pork on Hawaiian Rolls topped with fresh pineapple and cilantro. Enjoy!
