Simple, spicy fried chicken on biscuits with spicy maple butter!

  • Nobody will turn down these chicken biscuit sandwiches! Sometimes a tiny thing takes an already good recipe to the next level. In this case, you would be completely fine making delicious fried chicken and putting it between a flaky biscuit. That would be good. But the real secret to making these golden brown sandwiches great is the maple butter. It’s just three simple ingredients, but that maple butter melting into the biscuit makes a savory/sweet sandwich that just might change your sandwich game forever. You could sandwich these fried beauties between any biscuit, honestly, but I just baked up a batch of Pillsbury™ Grands!™ Biscuits. They turned out nice and and flaky. Assembly is pretty straightforward. A good smear of the butter stuff and a piece of chicken is all you need to make a sandwich! You could either make them in advance so people could grab and go, or they could assemble their own! If you’re serving these as a meal, you’ll probably want to make sure people can have more than one as they're kind of on the small side. And they're really good!

Ingredients

  • 2 large chicken breasts, boneless and skinless
  • 2 cups all-purpose flour
  • 1 tablespoon chili powder
  • 1 tablespoon kosher salt
  • 1 tablespoon black pepper
  • 1 cup buttermilk
  • 1 teaspoon paprika
  • 2 cups canola oil, for frying
  • 1 can (16.3 oz) refrigerated Pillsbury™ Grands!™ Flaky Layers Buttermilk Biscuits (8 Count)
  • 1/4 cup unsalted butter, softened
  • 1 tablespoon maple syrup
  • 1/4 teaspoon cayenne pepper

Instructions

    Bake Pillsbury™ Grands!™ biscuits according to package directions.

    For chicken, slice each breast horizontally down the center to butterfly it open. Then slice each into 4 even pieces.

    In a medium bowl, whisk together flour, chili powder, kosher salt, and pepper. In a second bowl, stir together buttermilk and paprika.

    Working with one chicken piece at a time, dredge in the flour mixture, then transfer to the buttermilk mixture, then back to the flour. Coat each piece well with flour and let sit on a plate. Repeat with all chicken pieces.

    Heat oil in a large skillet over medium heat until it reaches 350°F. Fry chicken in batches for 4-5 minutes per side until they are golden brown and cooked through.

    When chicken is done frying, transfer to a paper towel to drain.

    In a small bowl, mash together butter, syrup, and cayenne.

    To make a sandwich, split open a biscuit and smear on some maple butter. Place a piece of fried chicken between the biscuit halves and chow down!
