Dessert shooters — teensy little two-bite tastes of decadent desserts — are the hottest way to serve up a sweet treat without all the calories and time requirements that go into the making of a big, huge hunk of calorie-laden goodies. With the summer season right around the corner, why not whip up a batch of everyone’s favorite seasonal sweet — Strawberry Shortcake — in a perfectly pint-sized package: Strawberry Shortcake Shooters! Bake a white Betty Crocker cake according to package directions. Since that one cake will yield about 20 of these little dessert shooters, try cutting the cake in half and freezing the second portion for one of those days when you’ve got to pull something snappy and spectacular together fast. You can use 10 small shot glasses, or if you’re using large shot glasses, you’ll be able to make about 6. Pop a dollop of whipped topping over the the whole thing. Don’t go easy. The more the merrier in this case. Now would be an appropriate time to lick fingers. Or sneak a shooter. This recipe makes enough for nine, right? Garnish each shot glass with a small, whole strawberry. Serve the shooters immediately, or refrigerate them until ready to serve, up to 1 hour. (Refrigerating them any longer will leave you a messy mush of cake at the bottom.)

Ingredients

  • 1 box Betty Crocker™ Super Moist™ White Cake Mix, prepared and baked according to package directions
  • 1 1/2 cups strawberries, finely diced
  • 1/4 cup sugar
  • 1 tub (8 oz) whipped topping
  • 10 small, whole strawberries

    Cut the cake in half, wrap one half very well and store in the freezer for later.

    With the second half of the cake, crumble it into small pieces. Press a small amount of cake into the bottom of 10 small shot glasses.

    In a small bowl, combine the strawberries and sugar. Spoon a bit of strawberries over the cake layer into the shot glasses.

    Place a second layer of cake just over the strawberry layer. Top with a spoonful of whipped topping. Garnish with a single strawberry atop each shot glass. Serve immediately, or store chill until ready to serve, for up to an hour.
