When you just don't have time to fuss over dinner, this flavorful recipe is the perfect answer.

Super Easy Chicken Broccoli Bowl

Ingredients

  • 8 oz cooked chicken (rotisserie chicken works great!)
  • 1 (12 oz) package frozen broccoli cuts
  • 1 large carrot, peeled and shredded
  • 1/4 cup Hoisin sauce
  • 2 tsp rice wine
  • 1 tsp ground ginger
  • 1 tsp garlic powder
  • 4 cups cooked rice
  • Sliced almonds (optional)

Instructions

    Dice the chicken and transfer to a large mixing bowl. Cook the broccoli according to package directions and then add to the bowl as well, along with the carrot.

    In a small saucepan, combine the Hoisin sauce, rice wine, ginger and garlic powder. Heat over a medium flame until boiling. Pour over the chicken, broccoli and carrots. Toss to coat.

    Scoop one cup of rice onto each of four plates. Top with the chicken mixture.

    If desired, sprinkle with almonds before serving.
