What could be a better comfort food for game day than soup and grilled cheese? Tomato soup with mini grilled cheese sticks, that’s what! Not only are they fun to look at (and easy to assemble), they taste delicious! Melty and crispy grilled cheese sandwiches to dunk into warm, basil-kissed tomato soup? Excuse me for a moment while I eat all of them before my guests arrive. Your guests are going to love these, I just know it. (Because I ate all of mine, that’s why. Ahem.) Game day just got a whole lot more fun and tasty with these comfort food bites!

Tomato Soup with Mini Grilled Cheese Sticks

Ingredients

  • 3 slices cheddar cheese
  • Mayonnaise, for spreading on baguette
  • 16 slices whole-grain baguette, cut into 1/2-inch slices
  • Butter, for the skillet
  • 2 cans (19 oz each) Progresso™ Heart Healthy Soup Creamy Tomato Basil
  • 8 (8 oz each) canning jars (lids removed) or ramekins
  • Chopped fresh basil, for topping
  • 8 small (approximately 4-inch) bamboo skewers

Instructions

    Prepare your ingredients and heat a large skillet or griddle over medium heat.

    Meanwhile, assemble sandwiches: Cut each cheese slice into 6 rectangles. Spread a thin layer of mayonnaise on one side of each baguette slice, then top half of baguette slices (mayonnaise-side down) with cheese. Top with another baguette slice (mayonnaise-side up) to form 8 mini sandwiches.

    Melt a small pat of butter in heated skillet, then add sandwiches to skillet (in batches, if needed). Cook on both sides until bread is golden brown and cheese is melted, about 8 minutes total. Remove from heat.

    Meanwhile, in a medium saucepan over medium heat, heat soup until warm. Divide soup evenly among canning jars or ramekins. Top with chopped fresh basil.

    Cut each grilled cheese sandwich in half, then skewer 2 halves onto each skewer. Place skewers on top of jars of soup just before serving.
