Vegan Double Chocolate Brownies

Ingredients

  • 1 cup all-purpose flour
  • 1/3 cup unsweetened baking cocoa
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup pure maple syrup
  • 1/2 cup original almond milk
  • 1/3 cup refined coconut oil, melted
  • 1 1/2 teaspoons vanilla
  • 1 cup vegan chocolate chips

    Heat oven to 350°F. Spray 9-inch square pan with cooking spray.

    In large bowl, mix flour, cocoa, baking powder and salt until well mixed.

    In small bowl, mix syrup, almond milk, coconut oil and vanilla with whisk until well mixed. Stir into flour mixture until well blended. Stir in 1/2 cup of the chocolate chips. Spread in pan; sprinkle with remaining chocolate chips.

    Bake 20 to 25 minutes or until toothpick inserted 2 inches from side of pan comes out clean. Cool at least 1 hour before cutting. Cut into 4 rows by 4 rows. Serve at room temperature.
