  • Vegetable Fried Rice is total Chinese comfort food….in minutes! I am a bit obsessed with fried rice. It was the first food, along with egg drop soup, that I learned to eat at Chinese restaurants as a kid. But somehow, I never quite grew out of it and admittedly still order fried rice nearly every time we hit up a Chinese restaurant or takeout. Call it carbs, call it good flavor, call it comfort food….I just love it! The fun thing is that it’s also a breeze to make at home! The key is just having some refrigerated rice ready to go. It’s a great use for leftover rice, or it’s also quick and easy to make a batch the night before or in the morning prior to work. And then mixing it with these Green Giant Valley Fresh Steamers makes the veggie part a breeze! Just steam and add them directly to the fried rice, and voila! A simple and DE-licious meal is ready to go in less than 15 minutes. So fast! Yet another reason why I love fried rice. Give it a go! You can be brave and go with chopsticks, or use the ol’ fork. I won’t tell!

Ingredients

  • 2 tablespoon olive oil
  • 1 small white onion, diced
  • 3 cloves garlic, minced
  • 1 1/2 tablespoon grated fresh ginger
  • 1 package frozen mixed vegetables, cooked according to package instructions
  • 4 cups refrigerated cooked rice
  • 3 eggs, scrambled
  • 2 tablespoon soy sauce (or more to taste)
  • 1 tablespoon oyster sauce (optional)
  • 2 teaspoon sesame oil

Instructions

    Prepare frozen vegetables according to directions.

    While the vegetables cook, scramble the eggs in a frying pan, making sure to break the egg up into small pieces.

    Heat olive oil in large skillet over medium-high heat. Add onion, garlic and ginger and cook for 5 minutes or until onion is cooked and translucent.

    Add the steamed vegetables, rice, scrambled eggs and soy sauce. (Also add oyster sauce here, if desired.) Continue to saute, stirring occasionally, for an additional 3 minutes. Stir in sesame oil and cook for one minute, then remove from heat. Serve immediately.
