  • Pannekoeken? Panekuchen? Dutch Baby? Whatever you call it, a giant oven-baked pancake is always delicious. Is there ever a time in life that does not call for pancakes? Yes, actually. There is. And that time is when you’re too busy doing other breakfast-y things (hello, bacon, you time consuming bit of deliciousness, you) to stand around flipping flapjacks. That’s when the Dutch baby comes in. This fall, let’s go ahead and mix things up in the Dutch baby department. Let’s bring in some apples. And some streusel. And maaaaaaybe a little drizzle of caramel, because caramel and apples go together like pumpkin and lattes. You know? What comes out of your oven will smell like fall, taste like a dream, and be begging for a drizzle of caramel sauce or pure maple syrup. Dig in, guys!

Apple Crisp Dutch Baby Pancake

Ingredients

  • 3/4 cup all-purpose flour, divided
  • 3 eggs
  • 2/3 cup milk
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 6 tablespoons butter, divided
  • 3 small apples, peeled and sliced thin
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup rolled oats
  • 1/4 cup brown sugar

Instructions

    Preheat oven to 425°F. Add 1/2 cup of the flour, eggs, milk, vanilla, and salt to a blender and blend until well combined and frothy. Set aside to rest for 10 minutes.

    Add 2 tablespoons of butter to a 12-inch cast iron skillet and melt. Add apple slices and sprinkle with cinnamon. Cook, stirring often, for 2 minutes.

    Pour batter over the apples and place in the oven for 10 minutes.

    While the pancake is baking, prepare the streusel by combining the remaining 1/4 cup flour, rolled oats, brown sugar, and remaining 4 tablespoons of butter. Use a fork to combine the mixture until it forms clumps and the butter is distributed throughout.

    Sprinkle the streusel topping over the pan and return to the oven for 10 more minutes.

    Remove from the oven. Slice and serve.
