These delicious apple cinnamon pancakes are easy enough to make any day of the week.

  • When my son started kindergarten, it changed everything for us. Whereas we used to have elaborate breakfasts most mornings, we traded the buttermilk pancakes and vanilla-scented maple syrup for bowls of cereal and frozen waffles. Lunches went from pasta dishes to sandwiches very fast. And dinner? It takes more planning than ever now. As for my own schedule? I’ve always been a night owl, staying up 'til the wee-hours finishing assignments for work. But now that my son has to wake at 6:30 a.m., I can’t do that anymore, so I had to adjust how I work too. A month ago, my son asked if we'd ever have pancakes – his favorite breakfast – anymore. It’s true. I rarely make them because I rarely have the time to whip ‘em up in the predawn hours since I make them from scratch.
  • But the comment struck a nerve. Why should he miss out on his favorite meal because I like to make them a certain way? Why can’t I be flexible and make them a faster way – and have them still be delicious? That’s how I came to make Easy Apple Cinnamon Pancakes. I’ve cut down on the steps and process by using Bisquick Heart Smart baking mix, and adding milk, an egg, a grated apple and cinnamon. It takes just a few minutes to make the batter and cook ‘em up. So yes, these are pancakes perfect for any day – and my son was so excited to have them before school.

Easy Apple Cinnamon Pancakes

Ingredients

  • 1 cup Bisquick Heart Smart™ mix
  • 1/2 cup lowfat milk
  • 1 large egg
  • 1 apple, peeled, cored and grated
  • 1 tsp ground cinnamon

Instructions

    Heat a griddle over medium heat on the stove.

    While the griddle is heating, whisk together the Bisquick, milk, egg, grated apple and cinnamon in a mixing bowl.

    Once the griddle is hot, drop rounds of pancake onto it -- about 1/4 cup each. Cook without disturbing until bubbles form all over the top. Then, flip the pancakes and cook briefly on the other side.

    Serve with maple syrup.
