  • Artichoke hearts and Parmesan baked up in bacon. So good, your game day partiers might even lose track of the score. These bites are the perfect game day snack or appetizer for any party. It all starts with some artichokes, gets a little love from some Parmesan and then wraps up in bacon. Like I said, these bites are perfect. They're super easy, great for making ahead, and I can pretty much guarantee they will make for some very happy guests! They are kind of like the new jalapeno popper, only there is a lot less work involved. Plus your eyes will not be burning for hours because you accidentally rubbed them after forgetting to wash your hands after touching the jalapenos. Yeah, been there, done that. But don’t worry, these bites still have a little kick in them in the form of a spicy chipotle aioli. You're going to love the flavor! Just downright delicious. Try only eating a few… Yeah – not even possible.

Bacon Wrapped Artichoke Bites with Chipotle Aioli

Ingredients

  • 2 jars (14 oz) artichoke hearts
  • 10 slices bacon, halved crosswise
  • 1/2 cup shredded Parmesan cheese
  • 1/2 teaspoon pepper
  • 3/4 cup mayonnaise
  • 1 clove garlic, minced or grated
  • 1 teaspoon honey
  • 1 whole canned chipotle chiles in adobo, minced
  • 15 whole toothpicks (optional)

Instructions

    Preheat oven to 400°F. Arrange the bacon strips on a baking sheet lined with foil. Sprinkle the bacon with Parmesan. Place the artichoke heart in the center of each bacon strip. Wrap the bacon around the artichoke and, if desired, secure the bacon with a toothpick. Sprinkle the bites with a little Parmesan and pepper.

    Bake for 45 minutes, or until bacon is crispy.

    Meanwhile combine the mayo, garlic, honey, minced chipotle chiles and a pinch of pepper in a medium bowl. Stir until combined and smooth. Transfer to a dipping bowl and place in the fridge until ready to use.

    Serve the bacon bits with toothpicks and the spicy chipotle aioli.
