Beef Soba Noodle Soup

Ingredients

  • 2 tablespoons vegetable oil
  • 1 lb lean (at least 80%) ground beef
  • 1 medium red bell pepper, cut in thin strips
  • 6 green onions, sliced diagonally, white and green parts separated
  • 1 cup matchstick-cut carrots
  • 1 teaspoon finely chopped peeled fresh gingerroot
  • 1 tablespoon reduced-sodium soy sauce
  • 1 tablespoon chile garlic sauce
  • 2 cartons (32 oz each) Progresso™ beef flavored broth
  • 6 oz uncooked soba (buckwheat) noodles
  • 1/4 cup chopped fresh cilantro leaves
  • Lime wedges

Instructions

    In 5-quart Dutch oven, heat 1 tablespoon of the oil over medium-high heat. Add beef; cook 7 to 9 minutes, stirring occasionally, until beef is browned. Drain; transfer to medium bowl.

    Add remaining 1 tablespoon oil to Dutch oven over medium-high heat. Add bell pepper, green onion whites and carrots; cook 6 to 8 minutes or until softened and beginning to brown.

    Stir in beef, then stir in gingerroot, soy sauce and chile garlic sauce. Stir in broth; heat to simmering. Add noodles; heat to simmering. Reduce heat to medium; cook 4 to 7 minutes longer, stirring occasionally, until noodles are tender.

    Top with green onion greens and cilantro. Serve with lime wedges.
