  • Cauliflower and broccoli are my kids’ favorite veggies so I try to use them in as many ways as possible, so they don’t get bored. One of my favorite recipes is the one for these bites made with cauliflower and cheese. They’re easy to make and the taste is delicious. These cauliflower and cheese bites are the perfect side for any main dish. My kids love to eat them with a little bit of ketchup but you can also serve then with any kind of sauce or on their own.

Cauliflower and Cheese Bites

Ingredients

  • 2 cups cooked cauliflower heads, finely chopped
  • 1/2 cup cheddar cheese, grated
  • 1/2 cup seasoned bread crumbs
  • 1/2 cup chopped onion
  • 1 egg, lightly beaten
  • 4 tablespoons fresh parsley, chopped
  • Salt and pepper, to taste

    Preheat oven to 400 °F.

    Line a baking tray with aluminum foil. Lightly coat with nonstick spray. Set aside.

    In a medium-size bowl, combine cauliflower, cheese, breadcrumbs, onions, egg and parsley. Season with salt and pepper to taste.

    Take about 2 tablespoons of the mixture and form the little bites in the shape of croquettes. Place them on the previously prepared baking tray. Repeat the process until you use all of the cauliflower and cheese mixture.

    Bake for 10 minutes, flip and bake for 10 more minutes or until golden on both sides.
