  • When you think of a Mexican snack or appetizer, what comes to mind? Perhaps guacamole or chips with pico de gallo sauce? Well, allow me to introduce you to chorizo and cheese dip, or choriqueso as it’s also known. I’m sure that it will become one of your new favorite dips! This chorizo & cheese dip can be made in a heartbeat. It’s makes an attractive and delicious snack for visits, or the perfect appetizer while watching a movie – and the kids will love it!

Ingredients

  • 3.5 ozs chorizo sausage, without the skin and minced
  • 1 tablespoon olive oil
  • 7 ozs Oaxaca or Chihuahua cheese, or any other variety that’s suitable for melting
  • 6 flour tortillas

Instructions

    Pre-heat your oven to 450°F.

    In a frying pan over medium heat, add the tablespoon of olive oil. When hot, place the minced chorizo into the pan. Stir constantly until cooked, usually 10-15 minutes depending on the type of chorizo. When ready, remove from heat and set to the side.

    Cut the cheese into small pieces and put in an oven-safe dish. Make a well or space in the middle of the cheese and fill with the chorizo. Place the dish in the oven and bake until the cheese has melted. This will take five to eight minutes, depending on your type of oven.

    When ready, remove from the oven and serve hot with flour tortillas and salsa.
