  • Ají sauce is a staple in Colombian cuisine. It’s commonly used to accompany empanadas, patacones, arepas and grilled meats. The sauce’s ingredients can always be found in Colombian kitchens so that ají can be prepared in under 30 minutes to enjoy with any main dish. You set your preferred level of spice by adding more or less chili peppers and striking the perfect level of acidity when adding the vinegar. All that's left after that is to enjoy this delicious sauce with the meal you desire most.

Ingredients

  • 1 ripe tomato, diced in small cubes
  • 1 cup chopped cilantro
  • 1 ají pepper or habanero chili pepper (finely chopped and seeded)
  • 1/2 stalk chopped green onion
  • 1/4 cup white vinegar
  • 2 tablespoons water
  • Salt and pepper to taste
  • Lemon juice drops (optional)

    Combine all finely chopped ingredients in a deep bowl.

    Check the seasoning and if desired, you can add a few drops of lemon juice.

    Refrigerate for at least 20 minutes for the mix of flavors to intensify.
