  • Make these sweet potato fries with just a few ingredients. They're easy! Candy, candy, and more candy. In my house there's a bowl of candy corn in the front room, and piles of mini chocolate wrappers mounded near the kitchen sink. There's boxes of taffy in backpacks, and half-eaten caramel apples wrapped and waiting to be finished in the fridge. We're sick of sweet already, and Halloween hasn't even arrived yet. So, we're kicking the sugar and going for food that's fun…and healthier! If you're like us, looking for a quick, easy Halloween eat that's naturally sweet and fun to nibble on, try making these Halloween Sweet Potato Fries. They take minutes to make and are a welcome side for parties or fall dinners. I've written olive oil into the recipe because that's the most common oil to use for stuff like this, but if you have a chance, try nabbing some avocado oil. It's got a much higher smoking point, so it's safer for baked treats. Plus, the flavor is mild and happy. Pull those babies from the oven and pop them onto a plate. Happy HalloweEATING!

Ingredients

  • 2 large sweet potatoes
  • 1/2 teaspoon pumpkin pie spice
  • 1 tablespoon sugar
  • 3 tablespoons olive oil
  • 1/2 tablespoon salt

Instructions

    Scrub the sweet potatoes clean. Slice sweet potatoes into 1/4 rounds.

    Use mini cookie cutters to cut jack-o-lantern faces, stars, and pumpkins into the center of each sweet potato slice. Or, use a small knife and carve a mini jack-o-lantern face into the sweet potato slices.

    Place sweet potatoes on a parchment-lined baking sheet. Drizzle with olive oil, sprinkle with pumpkin pie spice, sugar, and salt. Bake in an oven preheated to 400°F and cook until tender, about 18-22 minutes.
