  • Who doesn’t love sweet potato casserole? It’s sweet and savory and so darn pretty. Here's an awesome sweet potato casserole to roll out just in time for holiday entertaining. This version has bourbon, pecans and maple bacon too! At holidays, I particularly like an assortment of side dishes. Give me green bean casserole, stuffing, gravy, corn and a big helping of sweet potato casserole (and let’s not forget the rolls!). This time around, I want the sweet potato casserole all jazzed up for the holidays with fancy bourbon, pecans and maple bacon. The end result is a creamy sweet potato goodness with a hint of orange, spices and bourbon and topped with a fantastic crunchy streusel made up of brown sugar, maple bacon and pecans. To save time, you can roast and peel the potatoes a day in advance – so all you have to do the day of is mash and build the casserole!

Ingredients

  • 5 lbs sweet potatoes

Streusel

  • 3/4 cup whole wheat flour
  • 3/4 cup dark brown sugar
  • 3/4 teaspoon kosher salt
  • 8 tablespoons unsalted butter, cut into pieces
  • 2 strips maple bacon, chopped and cooked until crispy
  • 1 cup chopped pecans

Sweet Potato Mixture

  • 6 tablespoons unsalted butter, plus more for buttering baking dish
  • 1 medium orange, zested
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon freshly grated nutmeg
  • 1 1/2 teaspoons kosher salt
  • 1/3 cup bourbon
  • 1/4 cup half and half

Instructions

    Preheat your oven to 375°F. Scrub 5 pounds sweet potatoes and roast them on a foil lined, rimmed baking sheet for 1 hour (or until a knife pierces easily). Remove, cut in half and let cool until easy to handle.

    Liberally butter a 9x13 baking dish with butter.

    In a small bowl blend the whole wheat flour, brown sugar, 1 teaspoon of kosher salt and cold butter until small, pea-size pieces form. Add in cooked bacon and pecans and use your hands to from large crumbles. Keep cold in the refrigerator until ready to use.

    In a small sauce pan; add the 6 tablespoons of butter, orange zest and a half teaspoon of both cinnamon and nutmeg.

    Add in the bourbon and bring to a low simmer until the butter has melted and small bubbles start to form.

    Scrape the sweet potato flesh into a large bowl and discard the skins. Add in the teaspoon and a half of kosher salt and mash until fairly smooth. Add in the bourbon mixture and half and half and stir until smooth.

    Spread the bourbon sweet potato mixture into the prepared pan and top with the chilled bacon/pecan streusel.

    Bake in the oven for 18-20 minutes. Let cool for 5 minutes before serving.
