Sweet Potato and Bacon Foil Packs

Don’t think; just make these. They’re that good — promise. But if you need further convincing, know that sweet potatoes are the perfect side to grilled chicken or pork and that this recipe requires almost zero cleanup.

Sweet Potato and Bacon Foil Packs

Ingredients

  • 2 tablespoons butter, melted
  • 1 tablespoon real maple syrup
  • 1/2 teaspoon salt
  • 1/8 teaspoon ground red pepper (cayenne)
  • 1 1/2 lb sweet potatoes, peeled and cut in 1-inch pieces
  • 3 slices bacon, chopped
  • 1 cup shredded Fontina cheese (4 oz)
  • 2 tablespoons chopped green onions

Instructions

    Heat gas or charcoal grill. Cut 2 (18x12-inch) sheets of heavy-duty foil. Spray with cooking spray.

    In medium bowl, mix melted butter, syrup, salt and red pepper. Add potatoes and bacon; stir until evenly coated. Divide mixture evenly among sheets of foil.

    Bring up 2 sides of foil so edges meet. Seal edges, making tight 1/2-inch fold; fold again, allowing space for heat circulation and expansion. Fold other sides to seal.

    Place packs on grill over medium heat. Cover grill; cook 12 minutes. Rotate packs 1/2 turn; cook 10 to 12 minutes longer or until potatoes are tender. Remove packs from grill, cut large X across top of each pack. Carefully fold back foil. Sprinkle potatoes with cheese; loosely close, and let stand 3 to 5 minutes or until cheese is melted. Garnish with green onions.

    To make in oven, place packs on cookie sheet. Bake at 375°F 40 to 45 minutes or until potatoes are tender. Add cheese and green onion garnish as directed above.
