  • Party dips need a pick me up? This hot spinach dip has got you covered. Things are getting spicy up in here! Just the way I like it. Well, okay, so actually I’m kind of a wimp. I can handle the most spice out of anyone in my house though, and it makes me feel very tough. At least, I feel tough until I'm around other people slathering their food in sriracha and talking about eating habanero peppers as a snack. Then I cry like a baby. But! Today I have an ultra cheesy dip for you that will totally be the star of the next football game. I mean, we're all watching those games for the food, right? Let’s do this!

Hot Spinach Con Queso Dip

Ingredients

  • 1 jalapeño pepper
  • 1/2 sweet onion
  • 1 tablespoon butter
  • 4 oz cream cheese
  • 8 oz pepper jack cheese
  • 1/2 cup milk
  • 4 oz diced pimientos
  • 5 oz frozen chopped spinach
  • 1 teaspoon salt

    Heat a medium-size skillet over medium heat.

    While the skillet is heating, cut the jalapeno in half lengthwise. To keep things tame, remove the membranes and seeds, using a spoon to scrape them out. If you’d like the dip to be extra spicy, leave the seeds and membranes intact.

    Dice the peppers and onion.

    Add the butter to the skillet and let melt.

    Stir in the peppers and onions and cook for 3-4 minutes or until softened. Reduce the heat to low and add the cream cheese. Stir until it starts to soften and melt.

    Stir in the pepper jack cheese and continue stirring over low heat until it’s mostly melted.

    Add the milk and stir until smooth and creamy.

    While the cheese is melting, heat the spinach in the microwave according to package directions. Drain well.

    Stir the spinach, pimentos, and salt into the melted cheese.

    Serve with sliced bread, tortilla chips, or fresh vegetables.
