Meatball Stroganoff Pasta Skillet

This one-skillet dinner is a total weeknight savior. It's full of flavor from the sautéed mushrooms and onions, and using tender meatballs instead of expensive beef cuts ensures you won't break the bank. Talk about a win-win!

Ingredients

  • 1 lb ground beef (at least 80% lean)
  • 1/4 cup Progresso™ plain panko crispy bread crumbs
  • 1/4 cup milk
  • 1 egg
  • 1 tablespoon Worcestershire sauce
  • 2 cloves garlic, finely chopped
  • 3/4 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 tablespoons butter
  • 1 package (8 oz) sliced baby portabella mushrooms
  • 1 medium onion, chopped
  • 2 cloves garlic, finely chopped
  • 3 tablespoons Gold Medal™ all-purpose flour
  • 1 carton (32 oz) Progresso™ beef flavored broth
  • 1/4 teaspoon pepper
  • 5 cups uncooked extra-wide egg noodles (8 oz)
  • 1 cup sour cream

Instructions

    In large bowl, mix beef, bread crumbs, milk, egg, Worcestershire sauce, garlic, salt and pepper. Shape into 20 meatballs.

    In 12-inch nonstick skillet, heat butter over medium-high heat. Add meatballs; cook 7 to 10 minutes, gently turning occasionally, until browned on all sides. Remove meatballs from skillet.

    Cook mushrooms, onion and garlic in drippings in skillet over medium heat 5 to 7 minutes, stirring occasionally, until tender. Add flour; cook and stir 1 minute. Stir in broth and pepper; heat to boiling. Add noodles and browned meatballs to skillet. Reduce heat to medium; simmer 13 to 15 minutes, stirring occasionally, until noodles are tender and meatballs are cooked through. Remove from heat; stir in sour cream.
