Raspberry Almond Croissant Bread Pudding

Just when you thought bread pudding couldn’t get any better, the croissant comes along, and brings a couple of pals (we’re looking at you, raspberries and almonds) and takes it to new heights.

Raspberry Almond Croissant Bread Pudding

Ingredients

  • 4 eggs
  • 3 cups half-and-half
  • 1 1/4 cups granulated sugar
  • 1 1/2 teaspoons vanilla
  • 1/2 teaspoon almond extract
  • 1/2 teaspoon salt
  • 8 large croissants, torn into 1-inch pieces (about 12 cups)
  • 1 1/4 cups raspberries
  • 1/2 cup sliced almonds
  • Powdered sugar

Instructions

    Heat oven to 350°F. Spray 13x9-inch (3-quart) baking dish with cooking spray.

    In large bowl, beat eggs, half-and-half, granulated sugar, vanilla, almond extract and salt with whisk.

    Place torn croissants in baking dish; pour egg mixture over top. Push down gently so croissants absorb custard.

    Let stand 10 minutes, and press again. Arrange raspberries on top of croissant mixture. Sprinkle almonds over top.

    Bake 45 to 55 minutes or until browned and puffy. Let stand 15 minutes. Sprinkle lightly with powdered sugar.
