  • I know lentils and rice might not sound like a very adventurous dish, but for me it absolutely was. This Slow Cooker Curried Rice and Lentils recipe is a major sidestep to what I usually make around our house. First of all, my husband banned curry powder from any meal being made in our house a long time ago. I guess a bad experience from some dish way back when turned him off from the spice. Not to mention that if it doesn't have meat in it it's also not considered a meal in our house. Double whammy! The ingredient list is short in this easy dish, but the main components of lentils, rice, and curry powder as the main spice give this a whole lot of flavor. After a couple of hours in a slow cooker you'll have a warm and filling vegetarian meal. The lentils make the dish hearty – and my husband even approved! (Although I admit that I didn't share that there was curry powder in the dish until after he gave his thumbs up.) So open your mind to different and new ingredients. You may be delightfully surprised like me!

Ingredients

  • 1 onion, diced finely
  • 1 cup white rice
  • 1/2 cup lentils
  • 1 tablespoon curry powder
  • 1 vegetarian bouillon cube
  • 3 1/2 cups vegetable broth
  • 1 teaspoon garlic powder
  • 1/4 teaspoon pepper

Instructions

    Place all ingredients in a slow cooker and give them a quick stir.

    Cook for 4-5 hours or until rice and lentils are soft. Serve warm.
