A spicy beefy burger topped with bacon, a fried egg and siriracha-Hollandaise sauce!

  • There's sriracha-hollandaise drizzled all over this burger. HALP.

    This is going to gloriously freak you out. Not only is it a beef burger (clap clap), it's a crazy breakfast-style burger with a fried egg on top (clap clap clap). And not only that, but there's crispy bacon underneath the fried egg and on top of the burger (clap clap clap clap). 

    And not only that, but there's a spicy sriracha-hollandaise happy drizzle all over the fried egg, on top of the crispy bacon, on top of the burger (clap clap clap clap clap). 

    Not only THAT, but I put a bunch of minced jalapenos in the burger meat (clap clap clap this is hard clap clap clap). 

    Botton line, your mouth is in need. This is the answer. I slightly adapted this recipe from Jason and Shawnda. You MUST TRY THIS.

    Let's get Benedict-ed!

    Start by making your burger patties! Lean ground beef, Worcestershire sauce, minced jalapenos and a pinch of salt and pepper, all in a bowl. Bam. 

    I mentioned there's bacon involved, right?

    Voila, patties. 

    Voila, burgers! 

    Now, you'll make your hollandaise. I was nervous, but it totally worked, and it's much easier than you think!

    Start by whisking a few egg yolks with a little bit of water, over a pot of simmering water. 

    Off the heat, add some lemon juice and a bunch of butter! Whisk, whisk. Then add the sriracha! I only used a teaspoon, but feel free to add more to up the spice factor. 

    I totally forgot to photograph the frying of the eggs! But you'll fry four eggs until the whites are set but the yolk is runny. AKA all the happiness. 

    Then just arrange and serve! Toasted English muffins, a little Hollandaise, a burger patty, the BACON, the fried egg, a good healthy (ha) drizzle of the hollandaise, and a little bit of parsley! 

    You JUST don't know. So make it.

Spicy Eggs Benedict Breakfast Burger

Ingredients

  • 4 slices center-cut bacon
  • 1 pound lean ground beef
  • 2 teaspoons Worcestershire sauce
  • 1 tablespoon minced jalapeno peppers
  • 3 egg yolks
  • 1 teaspoon water
  • 1 half lemon, juiced
  • 6 tablespoons butter
  • 1 teaspoon sriracha sauce (or more, if you want it spicier)
  • 4 eggs
  • 4 English muffins, halved and toasted
  • Salt and pepper

    Cook the bacon until crispy. Place on paper towels to drain.

    In a medium bowl, combine the beef, Worcestershire sauce, minced jalapenos and a pinch of salt and pepper. Divide the beef and form into 4 patties.

    Add the burger patties to the pan with the bacon fat. Sear on both sides and cook through, about 5 minutes per side.

    Place the 3 egg yolks and a teaspoon of water in a double boiler with simmering water below. (Or use a glass bowl over a small saucepan.) Whisk the yolks until thick, about 5 minutes. Off the heat, whisk in the lemon juice. Add the butter, two tablespoons at the time, until melted and thick. Add a pinch of salt and the sriracha sauce; whisk to combine.

    Crack the 4 eggs in the same pan and fry until the whites are set, but the yolks are still runny.

    Spread a little of the sriracha-Hollandaise sauce on the bottoms of each English muffin. Top with a burger patty, bacon, a fried egg and a good drizzle of the sriracha-Hollandaise sauce. Garnish with fresh parsley and serve immediately.
