An easy baked appetizer made with wonton wrappers!

  • Say hello to spring with these sweet pea pockets. Do you see it there on the horizon? It’s SPRING! Okay, actually it’s probably already happening wherever you live, unless you live in an especially chilly region. For me, spring means bright colors, fresh flavors and party food. That’s why I love these simple sweet pea wontons so much. They check all the boxes! Plus, they’re super easy to make. They start by lightly mashing together peas, mint and a pinch of salt. The mint really makes the wontons pop with flavor, so don’t skip it! Besides that, just whisk together the eggs and water for your egg wash and you’re ready to assemble. Okay. These can be a bit of a patience-tester, but put on some tunes and you’ll be done in no time. Keep filling until you’ve ran out of wrappers, cream cheese or pea mixture. You’ll probably get around 40! Let these cool before you chomp into one of them. The slightly sweet peas, cream cheese, and crunchy wonton wrapper is the perfect springtime combo!

Ingredients

  • 10 oz. sweet peas
  • 2 tablespoons fresh mint
  • 1/2 teaspoon kosher salt
  • 8 oz. soft cream cheese
  • Square wonton wrappers
  • 2 eggs + 2 tablespoons water

Instructions

    Preheat oven to 375° F. Line a few baking sheets with parchment paper.

    In a medium-sized bowl, lightly mash together thawed sweet peas, mint and salt.

    To make egg wash, whisk together eggs and water.

    Working with one wonton wrapper at a time, add about 1 teaspoon cream cheese and a small spoonful of pea mixture to the center of wonton. Wet your finger in the egg wash and run it around edges of wonton. Then, fold wonton over to make a triangle. Fold corners under and press out as much air as you can. Repeat with all wonton wrappers or until you run out of pea mixture!

    Brush wontons with egg wash and bake for 15-20 minutes until they’re golden brown and crispy.

    Serve baked wontons while they’re warm.
