Instant Pot™ Mushroom Risotto

Ingredients

  • 1/4 cup butter
  • 1/2 cup finely chopped shallots (about 2 large)
  • 2 cloves garlic, finely chopped
  • 8 oz cremini mushrooms, thinly sliced (about 3 cups)
  • 1/4 teaspoon salt
  • 1/8 teaspoon crushed red pepper flakes
  • 1 cup uncooked Arborio rice
  • 2 cups Progresso™ vegetable broth (from 32-oz carton)
  • 1/2 cup shredded Parmesan cheese (2 oz)
  • 1 teaspoon fresh thyme leaves
  • 2 cups lightly packed baby spinach

Instructions

    On 6-quart Instant Pot™, select SAUTE; adjust to normal. Melt 2 tablespoons of the butter in insert. Add shallots and garlic; cook 1 minute, stirring constantly. Add mushrooms, salt and pepper flakes; cook 4 to 5 minutes or until mushrooms are softened. Add rice; stir about 1 minute or until rice is coated. Select CANCEL.

    Add broth to mushroom mixture. Secure lid; set pressure valve to SEALING. Select MANUAL; cook on high pressure 7 minutes. Select CANCEL. Set pressure valve to VENTING to quick-release pressure.

    Stir in remaining 2 tablespoons butter, the cheese and thyme until blended. Stir in spinach until wilted.
