Vegan Sweet Potato Casserole

Vegan or not, this sweet potato casserole will have everyone sneaking back in line for seconds. We think it has something to do with the melted marshmallow topping, maple syrup or cinnamon, but who’s to say for sure?

Vegan Sweet Potato Casserole

Ingredients

  • 2 lb orange flesh sweet potatoes, peeled and cut in 1-inch chunks
  • 1/4 cup vegan vegetable oil spread
  • 3 tablespoons real maple syrup
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground allspice
  • 2 cups vegan miniature marshmallows

Instructions

    Heat oven to 375°F. Spray 8-inch square (2-quart) glass baking dish with cooking spray.

    Add sweet potatoes to 4-quart saucepan; cover with water. Heat to boiling over high heat; cover and reduce heat. Simmer 10 to 14 minutes or until potatoes are tender. Drain; transfer to medium bowl. Mash potatoes with potato masher. Add vegetable oil spread, maple syrup, salt, cinnamon and allspice. Stir to completely blend. Spoon into baking dish.

    Bake 15 minutes; top with marshmallows. Bake 8 to 10 minutes or until marshmallows are browned and casserole is bubbling around edges.
