A gelatin riff on the classic Cosmopolitan Cocktail!

  • It all started back in the summer of 2009; I was looking for a fun addition to a barbeque. Gelatin shots fit the bill, but I wanted something more than just flavored gelatin with vodka or rum. After a fruitless internet search, I concocted two of my own recipes, Cosmopolitan and Pina Colada Jelly Shots. Cosmopolitan Jelly Shot was one of the first recipes posted on the Jelly Shot Test Kitchen blog. A year and a half later, this recipe still garners more than its fair share of “hits”. No surprise though, really, if you think about it. The Cosmopolitan, for all the flack it gets due to unfortunate overexposure a la HBO’s “Sex in the City” and numerous other late 90’s-ish vehicles, is a great cocktail. It hits all the high notes and avoids pratfalls: fruity – but not too sweet; potent - but eminently quaffable. It’s a perfect cocktail for entertaining (has anyone ever turned down a Cosmo? I didn’t think so . . .). Cosmopolitan Jelly Shots can be served cut simply, garnished with lime zest and plated on a pretty tray. Or, serve in colorful mini-cupcake wrappers (place them in the wrappers immediately before serving for best results). Either way, they will be a hit at your next book club, board game, or bachelorette party!

Cosmopolitan Jello Shots

Ingredients

  • 1 1/4 cup cranberry juice cocktail
  • 2 1/2 envelopes plain gelatin
  • 1/4 cup Roses™ lime juice (or fresh lime juice with a healthy dash of simple syrup)
  • 1/4 cup Grand Marnier™, or Cointreau™ (use Cointreau™ or triple sec for a milder tasting jello shot)
  • 3/4 cup orange flavored vodka
  • 1/4 cup lime zest for garnish, if desired

Instructions

    Pour cranberry and lime juices into a small saucepan and sprinkle with gelatin. Allow to soak for a few minutes. Heat on low, stirring constantly, until gelatin is fully dissolved (about 5 minutes).

    Stir in the liquors, making sure to fully incorporate.

    Pour into pan or molds, and chill until set, several hours or overnight.

    To serve, cut into desired shapes and garnish with lime zest, if desired.
