  • I’ve been trying to find a fun après ski cocktail to turn into a jelly shot for all you winter sports buffs. As I am not a ski bunny or boarder, I naturally consulted Google regarding the appropriate cocktail for such an occasion. After finding several requisite hot chocolate schnapps-y drinks (and my sense is that “hot chocolate jelly shot” just doesn’t translate) I ran across a cocktail called, quite literally, the Après Ski Cocktail, a mixture of vodka, licorice liqueur (Ricard, Pernod, Pastis ... I suppose even Absinthe could be used), green creme de menthe, and lemonade. It’s an intriguing combo, and a bit complex, and frankly has been a bit tricky to gelatinize. I’ll let you know how it comes out. In the meantime, I discovered a wonderful Winter Margarita cocktail concocted over at the wonderful blog chatN’chow. Apple cider and cranberry juice are paired with the classic margarita counterparties, tequila, Cointreau™ (or Triple Sec) and a little citrus. chatN’Chow’s liquid drink recipe calls for fresh cider, which I didn’t have on hand, so I muddled the tequila with an apple for my jelly shot version. Seasonal taste profiles aside, the tequila is the star of the show in this recipe. If you aren’t sure yours is ready for prime time, dial it back a notch by substituting a couple tablespoons of tequila with additional juice. The end result, Winter Margarita Jelly Shot, is perfect for the season – light but flavorful. Great after a day on the slopes, or while engaging in my favorite winter sport, watching my husband shovel the front walk!

Ingredients

  • 1 small fresh apple
  • 3/4 cup agave (silver) tequila
  • 1/2 cup apple cider or apple juice
  • 1/2 cup cranberry juice cocktail
  • 2 tablespoons frozen lemonade concentrate, thawed and strained to remove solids
  • 2 envelopes unflavored gelatin
  • 1/4 cup Cointreau™ or triple sec

Garnish

  • 1 tablespoon coarse salt (kosher or sea)
  • 1 tablespoon large crystal sugar
  • 1 teaspoon chopped orange zest

Instructions

    In a small bowl, crush the apple with a cocktail muddler or back of a wooden spoon. Add the tequila. Set aside.

    Pour cider, cranberry juice and lemonade concentrate into a saucepan and sprinkle with gelatin. Allow to soak for a few minutes. Heat on low, stirring constantly, until gelatin is fully dissolved (about 5 minutes). Remove from heat.

    Strain the tequila, making sure to press out all the liquid. Stir the tequila and Cointreau™/triple sec into the gelatin mixture. Pour into pan, and chill until set, several hours or overnight.

    Mix the garnish ingredients together, and either serve the garnish alongside the jello shots, for dipping, Individual serving vessels may also be decorated with the garnish mixture as shown by wetting the rim and dipping into the garnish mixture. Place a jello shot in each.
